1 tbsp oil
1 diced onion
250-300g diced chicken
200g chopped canned tomatoes
1 pack Geeta's Madras Curry Paste
Stir fry onion in oil until browned.
Add chicken and cook until sealed.
Stir in paste and cook for 1-2 minutes.
Add tomatoes and stir for 1-2 minutes.
Add 100ml water, heat through, then simmer for 10-15 minutes or until cooked.
Just as delicious with lamb, seafood or vegetables.
