Easy to prepare Use four times weight of water to Polenta e.g. 50g Polenta + 200ml water. 1 serving = 50g uncooked Polenta. Bring water to the boil and add Polenta in a steady stream, stirring continuously with a wooden spoon or whisk. For soft Polenta cook for 1 minute. For firm Polenta cook for 5 minutes and then allow to set. Season to taste. Be aware, Polenta tends to bubble volcanically when cooking. Get creative For a tasty take on mashed potato: whisk Parmesan, mascarpone and butter into your soft Polenta and serve with grilled sausages. Alternatively to make crunchy and flavoursome Polenta chips, make firm Polenta, adding rosemary and parmesan to the pan along with the water. Once cooled slice and grill, then enjoy with an Italian leaf salad.
