Just Add:
500g mince beef
1 can of chopped tomatoes
150g grated cheese
1 green pepper

Serves 3-4

1. Sizzle Away
Pre-heat the oven to 180°C (still 180°C for fan assisted ovens), gas mark 4 should do it.
Dice the pepper into small pieces
Add 2 tablespoons of oil to a large hot pan and add the minced beef, breaking it up into small pieces whilst cooking. Sizzle away until the minced beef is brown before draining off the excess liquid.
Add the Seasoning Mix for Smoky BBQ enchiladas and stir it through the mince
Throw in the can of chopped tomatoes, the green pepper and half of the grated cheese and simmer for 4-5 mins. Save the rest of the cheese for later.
2. Warm them up
To warm the tortillas pierce the packaging and microwave on full power for 35-40 seconds.
To heat in the oven, remove packaging, separate tortillas and wrap in foil. 10 minutes at 180 °C (still 180 °C for fan assisted ovens), gas mark 4 should do it.
Keep them covered and warm until ready to use.
3. Bake & Enjoy
Spoon the beef filling into the middle of each warm corn tortilla, wrap it up tightly and place fold down in a baking dish
For the perfect topping, spread the Creamy Topping Sauce on top, making sure it covers the edges of the enchiladas.
Sprinkle over the remainder of the grated cheese.
Bake for 10-15mins or until golden brown
Take out the bubbling, Smoky BBQ Enchiladas, serve up and enjoy
