Casarecce with Sicilian Basil & Pistachio Pesto
Cooking time: 25-30 minutes
300g Tesco Casarecce
60g shelled pistachio nuts
30g Pecorino cheese, grated
2 garlic cloves
30g fresh basil
150ml extra virgin olive oil
Sea salt and freshly ground black pepper to taste
1.Dry roast the shelled pistachios in a frying pan until they have browned.
Remove from the heat and chop, put ¼ of the pistachios to one side and place
the remainder into a pestle and mortar or food processor.
2.Add the garlic to the pistachios and blend or pound to a paste. Add the basil
and pound/blend again, gradually adding the extra virgin olive oil.
3.Add the Pecorino and remaining pistachios and pound/blend briefly to keep
some larger pieces of pistachio for texture. Season with salt and freshly
ground black pepper to taste.
4.Cook the pasta according to the pack instructions in a large saucepan. Drain,
reserving some cooking water and place back in the pan. Add the pesto and stir
to evenly coat the pasta, adding some cooking water if needed to loosen the mix.
5.Serve immediately and if desired sprinkle with extra grated Pecorino cheese
