*Break into small pieces and place in a small non metallic bowl. - - -
*Heat on full power - 1 minute 40 seconds
*Stir and repeat process above until the chocolate is completely melted. - - -


Instructions:*Remove all packaging.
*Break into small pieces and place in a basin over a saucepan of hot (not
boiling) water, taking care to ensure that the water does not enter the mixture.
*As the chocolate melts, stir until it is free flowing and ready to use.

100g milk chocolate
100g plain chocolate
20g unsalted butter
175ml double cream
75g chopped mixed nuts, such as pecan nuts, roasted hazelnuts and almonds

Makes 24-30 truffles

Bring a little water to a simmer in a pan. Place the chocolate and butter in a
large bowl, then set the bowl over the simmering water (do not allow the base
of the bowl to touch the water). Stir until it melts. Heat the cream in a
separate saucepan until almost boiling (but do not allow to boil). Pour the hot
cream over the melted chocolate and mix together until smooth and well combined.
Line a baking tray with greaseproof paper and pour in the chocolate mixture.
Set aside to cool, then chill in the fridge until set. Once the chocolate
mixture has cooled and set, mix the chopped nuts together and sprinkle onto a
separate baking tray.
Roll the chilled chocolate mixture into small balls using your hands, then roll
each ball in the chopped nuts until completely coated. Place the truffles onto
a baking tray or plate and chill for at least 30 minutes, it until ready to
