Dish: Chicken Jalfrezi
Preparation: 10 minutes
Cooking time: 30 minutes
1 tbsp vegetable oil
1 tbsp ground cumin
1tbsp ground coriander
1tsp chilli powder
4 tbsp Garlic & Ginger Paste
3 onions, finely sliced
2 red peppers, finely sliced
4 chicken breasts, sliced
2 x 400g tins chopped tomatoes
200ml single cream
30g toasted flaked almonds (to serve)
20g fresh coriander, chopped (to serve)
1. Heat the vegetable oil in a large saucepan and fry the spices for 1 minute.
2. Add the Garlic & Ginger Paste and stir for 30 seconds.
3. Add the onions and peppers and fry until softened.
4. Add the sliced chicken breast and fry until well cooked.
5. Add the chopped tomatoes and simmer for 10-15 minutes.
6. Stir in the single cream and season to taste.
7. Serve with the toasted almonds and fresh coriander.
