Durum Wheat Semolina

Tagliatelle alla amatriciana
Cooking Time: 20-25 minutes
300g Tesco Tagliatelle
250g diced pancetta
1x400g tin cherry tomatoes
1 large red onion, peeled and finely sliced
1 tsp dried chilli flakes
3 tbsps freshly chopped flat leaf parsley
4 tbsps olive oil
100ml dry white wine
80g Pecorino Cheese, finely grated
1.Using a large frying pan over a medium heat, fry the onion for about 5
minutes, stirring occasionally.
2.Add the pancetta to the frying pan and cook for 3 minutes then add the wine
and cook for a further 2 minutes.
3.Meanwhile, cook the pasta according to the pack instructions then drain,
reserving some of the cooking water.
4.Place the tomatoes and chilli in the frying pan and cook uncovered for 8
5.Add drained pasta and parsley to the sauce and stir to combine.
6.Sprinkle with Pecorino cheese and serve immediately.
