Tripoline with Ricotta & vine ripened tomatoes
Cooking time: 15-20 minutes
300g Tesco Tripoline
3 tbsps olive oil
1 small red onion, finely diced
3 large vine ripened tomatoes, finely chopped
200g Ricotta cheese
Handful of fresh basil leaves, torn
1.Cook the pasta according to the pack instructions, drain and return to the
2.Meanwhile, heat 1 tablespoon of the olive oil in a frying pan over a medium
heat. Add the onion and cook for 5 minutes or until tender.
3.Add the tomatoes, Ricotta and remaining olive oil to the drained pasta and
gently combine over a low heat.
4.Serve immediately and sprinkle with torn basil leaves.
